Chia seeds date back more than 3,000 years when it became known as the "running food" by the Aztecs and Mayans. Small in size, it is large on nutrition. Beyond the healthy dose of calcium, protein, fiber and omega-3s, it will help you to feel fuller longer. When hydrated, the seeds develop a gelatinous coating that may have the ability to slow down digestion and prevent blood glucose spikes. When you add in fresh berries, some toasted walnuts and a drizzle of maple syrup, you may be hooked too.
Beyond Delicious Chia Seed Pudding
½ cup of Chia Seeds
2 cups of 1% Milk or Vanilla Almond Milk or Vanilla Soy Milk
1 Tsp Vanilla
Blend all ingredients in a bowl. Cover and place in refrigerator. Let sit 8-24 hours until seeds absorb the milk. Occasionally mix so seeds are evenly hydrated.
Serve with fresh berries and some chopped nuts.
May also sweeten pudding with drizzle of maple syrup or honey.
